My Green Goddess Salad Dressing

This delicious salad dressing will transform every salad you make. Packed full of green goodness, vitamins and minerals and so easy to make you will never buy a bottle of salad dressing ever again.

You will need 

  • 1 clove of crushed garlic

  • 4 tablespoons of apple cider vinegar

  • 1 cup of spinach leaves

  • 1/2 cup of parsley

  • 1/2 cup of basil leaves

  • 1/2 cup of the green ends of a bunch of spring onions

  • 1/4 cup of olive oil

  • 3 tablespoons of lemon juice

  • 7 tablespoons of filtered water

  • 1 teaspoon of pink Himilayan salt

  • A good bring of cracked black pepper

How to

  • Measure all the above ingredients into a blender.

  • Blend until smooth.

  • Store in a glass jar in the fridge.

  • This dressing will last for 5 days in the fridge.

Dark Chocolate, Pistachio, Crystalized Ginger and Freeze Dried Raspberry Bark

This delicious dark chocolate bark is so easy to make and is simply sublime as a healthy sweet treat at any time of the day.

You will need

  • 1 x Block of 70 % Cocoa Dark Chocolate

  • A handful of Chopped Pistachios

  • A handful of Freeze Dried Raspberries

  • A handful of Crystalized Ginger

  • A tablespoon of Coconut oil

  • 2 drops of Wild Orange Essential Oil

How to 

  • Put a small pot on the stove with 4 inches of water.

  • Place a glass bowl on top of the pot make sure the water does not touch the bowl.

  • Add the dark chocolate ,coconut oil and the wild orange essential oil and let the chocolate melt.

  • Lay a sheet of greaseproof baking paper onto a flat baking tray.

  • Pour over the melted chocolate and smooth it out with the back of a spoon.

  • Scatter over the pistachios, crystalized ginger and freeze dried raspberries.

  • Place in the fridge until it is set hard.

  • Turn onto a chopping board and cut into pieces.

  • Store in an airtight container in the fridge.

Raspberry, Mint, Honey and Chia Ice - Blocks 

These delicious ice- blocks are not only refreshing on a hot sunny day but they are also packed with protein from the chia seeds and will add to your 5 a day from the raspberries. They are super easy to make and will make a welcome addition to your freezer. Whats not to love 

You will need

  • 2 cups (250g) fresh or frozen raspberries

  • 10 sprigs of mint

  • 1 cup (240ml) coconut water

  • 1 tablespoon of honey

  • 1 tablespoon of chia seeds

How to

  • Place all the ingredients into a blender

  • Whizz until smooth

  • Pour into your ice-block mould

  • Add your ice-block sticks

  • Freeze over night for the best results
